Today its Monday and the weekend was hopefully joyful for everyone. It might though be possible that your diet hasn't been the healthiest as it tends to when you are on your vacation but diet has such a huge impact on your health and I personally really know what I'm talking about having lost over 60 pounds through the years, gaining some back and lost again.
I've been on every diet there is and changed lifestyles several times. The one thing though that has worked best for me is skipping suger and I try to obey that rule 80-90% of my time.
Low carb dieting is very popular in Iceland at the moment and is very good for people who are in the progress of "de-sugaring" You can eat a lot of good fat, meat and veggies instead and roasted broccoli, steak and Bernaise isn´t such a terrible alternative is it?
I´ve been blogging for about 2 years about low carb dieting but not only is it better for your waistline, it also suits people with gluten intolerance and allergies to wheat like my 12 year old son, so it´s got a lot of benefits.
Here we have a recipe who has been my most popular blog post from beginning and it is really easy to make and can save you when there is "NOTHING" to eat in the kitchen except sugary cookies.
Breakfast bun in less than 3 minutes.
½ tsp baking powder
¼ tsp salt
½ tsp HUSK fiber
1 tsp coconut flour or 2-3 tsp almond meal
3 tsp cream or almond milk
1 tsp cumin seeds ( optional )
Mix every ingredient together in a microwave safe bowl or cup. Mix until mixture is lump free and then place the bowl in a microwave oven and cook on high for 2.10- 2.30 Min, it can vary between ovens. Be careful when you remove bun from bowl it is very hot. Slice and enjoy with butter, cheese or whatever your want.
