Summer salad with pears & prosciutto!
I love a healthy salad and here is a recipe I threw together the other day. We are talking all good things put together in a bowl and you feel good eating it! Remember you also eat with your eyes so try to be a bit particular about how you put it in the bowl, it makes the world of difference!
Start off with tossing together a bit of arucola and garden lettuce and put it down as a base. Rip down some strips of prosciutto ham or any cured ham and curl it into the salad.
Small boats of peaches, which are just wonderful right now, peek up from the salad among a spread of toasted walnuts and thinly sliced pieces of pear.
Dress it with a mix of 1 dl olive oil, 2 Tbsp. balsamic vinegar, 1 Tbsp. soy sauce, 2 Tbsp. honey (best is to use soft honey), 2 tsp Sriracha hot chili sauce and 2 Tbsp. apple vinegar. Season with black pepper and salt and mix it all together in a bowl or a jar before drizzling lightly over the salad.
Finally top with couple of shavings of parmesan cheese, enjoy!
