María my sister, released a recipe book couple of years ago filled with sugar, wheat and gluten free recipes. The book is written in Icelandic but here I have translated one of her great ones, this might be the perfect treat for you this Christmas (or whenever really!)

There are loads of Rice Crispy and Corn Flakes treats but normally they are filled with sugar and are way unhealthier than these babies: 

I love bitter and dark chocolates and these are heaven for me, not to sweet, very fulfilling and oh so easy to make!

Nut flex - peaks!
 
70 g coconut flakes
70 g hazelnut flakes
70 g almond flakes
70 g pumpkin seeds or sunflower seeds.
100 g cacao butter
50 g coconut oil, scent- and flavourless
50 g Sukrin Melis
40 g coco
1 teaspoon vanilla essence 
1/2 teaspoon coarse seasalt
20 drops stevía, vanilla taste
 
Method:
Tear the cacao butter with a grinder into a bowl and add the coconut oil. Melt in a microwave for 1-3 minutes or until the butter and oil has melted. Sift Sukrin Melis into the butter oil and add the Stevia, vanilla and salt. 
Next mix the seed together in another bowl and combine with the wet mix. Distribute the mixture into small cupcake forms and freeze for about 15 minutes. Please store in the fridge. 
The mixture should fit about 40-50 mini moulds if you fill it half way up, keep them quite small because they are very fulfilling :)
