Me and Tota had a visit the other day from a dear dear friend and decided to take her out to a dinner! We went to KOL at Skólavörðustígur. For you travellers I recommend following them here on Trip Advisor, they are getting great reviews!
It is a beautiful restaurant and we have been there a couple of times before and always been pleased with the food, however this night, everything was on some sort of a different level! Our waiter for the first was FANTASTIC! We are talking cute, fun, upbeat, quick very keen on serving us and not to forget but he had this great humour and honestly I think the food tasted better as a result!
Me and Lína, our friend. ordered beef and it was so delicious and well cooked! Tóta had duck and I ate a part of her plate as well.. I must admit I was a little jealous, I wanted beef with a side duck.. greedy much?!!
Than me and Lina ordered ourselves a dessert and oh my lord.. what is happening here?! We are talking doughnut ball, some creamy jummy cream-cheesy thing, some crumbly little bits, oh and remember the cute waiter, he brought the hot caramel fudge and poured it over the whole thing at the table! I died and went to heaven for a little while, lets pause for a sec while I reminisce..
Anyway.. to the main point of today's post!
So we ordered this cocktail which was like the rest of the evening FANTASTIC!
OH and Gunnar Rafn was working the bar but he is in fact one of four owners of KOL and their cocktail maestro! I was so happy with the cocktail we ordered, called Donkey, I asked him if I could blog about it, "of course"! -he replied, gave me his card and couple of days later I received the recipe as well as full blown images of the beauty.. the cocktail,, not Gunnar.. he was cute also but you get the point!
I also bought the recently released recipe book by KOL and Donkey is in fact also in there!

Romm brew:
Cut 4-5 red apples in four boats, take the centre out and fill up a large jug. Add three cinnamon sticks and ten cloves and fill the jug up with light rum. Make sure the rum covers all the apples. Store at room temperature for two weeks and filter the rum. After this please store the rum in a fridge.
